The ingredients needed to cook Stir-fry Squash and eggplant:
- Take 1/4 of a medium sized squash
- Use 3 medium sized eggplant
- Get 1/4 kilo minced meat
- You need 1 small onion
- Provide 2 tomatoes
- Prepare 2 and 1/2 cups water
- Use 5 garlic scapes
- You need 2 tablespoon olive oil
- Provide to taste Salt, fish sauce, pepper
Steps to make Stir-fry Squash and eggplant:
- Chopped the onion, garlic and tomatoes
- Cut the eggplant and squash into cubes
- Boil squash in water until tender in a separate cooking pot
