The ingredients needed to make Yellow Moong sambar:
- Provide 1/4 cup - yellow moong dal
- Get 1/2 - medium size tomato chopped
- You need 2 - slit green chilli
- Take 1 - sweet potato chopped
- Use 1/4 tsp - turmeric powder
- Use 1/4 tsp - grated ginger
- Use 1 tsp - red chilli powder
- Take 1 tsp - fenugreek seeds
- Provide 1 tbs - coriander seed powder
- Get Small lemon size - tamarind
- Get For tadka :
- Use 1 tbs - oil
- You need 1/2 tbs - mustard seeds
- Get 1 tsp - cumin seeds
- Get 2-3 - red chilli
- You need 1/4 tsp - asafoetida
- Get 1 tbs - curry leaves
- You need 1/2 - chopped onion (optional)
- Prepare 1 tbs - finely chopped coriander leaves for garnishing
Instructions to make Yellow Moong sambar:
- Rinse the moong dal well. Cook the moong dal with pinch of turmeric powder and fenugreek seeds, grated ginger and 1/2 cup water in pressure cooker for 2 whistle.
- Switch off the gas.
- Meanwhile chopped the vegetables well. Soaked the tamarind in hot water for 10 minutes. And extract the juice.
- Now smashed the moong dal. Add red chilli powder and coriander seed powder. Mix well. Add chopped sweet potato, tomato and green chilli. Add tamarind juice and 1 cup water.
- Then add salt, jaggery. Mix all ingredients together. You can add the vegetables of your choice and whatever available in the fridge.
- And again cook in pressure cooker for 1 whistle. Immediately switch off the gas. Allow the cooker to release the pressure.
- Open the cooker. Add water if required to adgust the consistency. Now heat the oil in a small pan. Add mustard seeds, cumin seeds, asafoetida, red chillies, curry leaves.
- Switch off the gas. Add tadka to the dal. Mix well. Boil dal for 2 minutes.
- Garnish with chopped coriander leaves. Moong dal sambar is ready to serve. You can serve it with rice, idly, dosa or vada.
