- Preheat oven to 350
- Remove giblets from chicken, rinse and pat dry
- Place chicken in deep covered casserole dish or roasting pan
- Rub butter and spices on and under skin
- Place whole peeled onion in neck cavity
- Cook in preheated oven for 1.5 to 2 hours or until slightly brown, drumsticks pull away from breast, and juices run clear.
