The ingredients needed to prepare Hot Wings in Honey Lime Chilli Sauce:
  1. Get 8-10 Chicken Wings and/or Drumlets
  2. Prepare Dry Rub (mix well in a bowl);
  3. Use 2 tsp Smoked Paprika
  4. Take 1 tsp Turmeric
  5. Take 1 tsp Salt
  6. Use 1 tsp White Pepper
  7. Provide 1 g Ground Clove
  8. Prepare 1 g Ground Nutmeg
  9. Use 1 g Ground Cinnamon
  10. Take Sauce (mix well in a bowl);
  11. Provide 1/3 cup Lingham's Chilli Sauce
  12. Get 1 Tbsp Sugar
  13. Use 1 Tbsp Lime
  14. Get 1 Tbsp Honey
  15. Use Frying;
  16. Prepare 20 g Ginger (finely chopped)
  17. Get 20 g Garlic (finely chopped)
  18. Prepare 20 g Spring Onions (finely chopped)
  19. Use 1 cup Cooking Oil (deep frying)
  20. Use 1 Tbsp Ghee or Oil

Instructions to make Hot Wings in Honey Lime Chilli Sauce:
  1. Rub the chicken with the spices and marinade for 30 minutes or more.
  2. In a saucepan, add 1 Tbsp of Ghee/oil and fry the spring onions, garlic and ginger until fragrant. Add in the sauce mixture and cook until the sauce thickens. Rest and set aside
  3. When ready, deep fry the chicken wings until brown. Then, lightly coat or toss the chicken wings in the sauce, or you can serve the wings as is with the sauce in a dipping bowl. Garnish with spring onions.
