  1. Dice your butter or margarine, and mix it with the sugar, either by hand or with an appliance.
  2. Add the flour, vanilla extract, and water.
  3. Mix until you have a smooth dough. Wrap the dough in clingfoil, and refridgerate for 30 minutes.
  4. Take out your dough and place it on a floured surface. Sprinkle some flour on top of the dough and then add some to a rolling pin.
  5. Roll out your dough so it is roughly 1,5cm/1in thick.
  6. Cut your cookies into "bars" and just make a pattern on them with a fork. Do NOT go all the way through the cookie, just press down very lightly with the fork.
  7. Line a baking tray with some parchment paper or baking paper or the equivalent.
  8. Put your cookies on the baking tray and sprinkle lightly with caster/granulated/refined sugar.
  9. Bake in the oven at 190 celsius/350F for roughly 12-18 minutes or golden.
  10. Take them out from the oven and let them cool on the tray for about 3-4 minutes.
