  1. Use olive oil
  2. You need green chilli,chopped and deseeded
  3. Prepare lemongrass,chopped
  4. Provide onion,chopped
  5. Provide garlic,crushed
  6. Prepare ground cumin
  7. Prepare ground coriander
  8. Provide Thai fish sauce
  9. Use lime (zest and juice)

  1. In a saucepan fry the chopped onion in the olive oil for a few minutes.
  2. Add the remaining ingredients except the coriander leaves,and bring to the boil.Simmer for about 10 to 15 minutes.
  3. Whilst step 2 is cooking,fry the chopped chicken breast in a little olive oil until browned and cooked through.
  4. Allow to cool to room temperature (as per manufacturer's instructions).
