- Take 1/2 cut Salmon (filet)
- Get 80 grams Lotus root (Oochi variety)

- Prepare 1/2 tsp Kanzuri (a spicy paste made of chili pepper, malt, Chinese citrus, and salt)
- Take 1 tbsp Sake
- Get 2 tbsp Cake flour
